A chocolate batter is truly transformed by the greatness of pineapple lumps.
Pineapple lumps are interesting – they live in a world where they are either
loved or hated, not in between. Me, I am of the former group, as is one of my
closest friends for whom this cupcake was a birthday present.
The chopped up bits actually caramelise slightly and
become chewy and stringy (in a good way, I promise) which reminds me of spun
toffee (I told you in a good way)! My friend and her family apparently had them
for breakfast. Why don’t you? And I challenge you to give it a *shudder* hater
of this lump – They may like spun toffee caramelised pineapple lumps!!!

You
can garnish with chopped pineapple lumps but I opted for drained canned
pineapple to add a little more contrast with that decadently dark cupcake. The
pineapple frosting (sounds exotic ay?) is also a must make – I ate the remaining
out of the bowl as is!!!
