Pancakes with a French twist…

Some things are staple. Currently, my staple are eating an apple a day, studying for pathetic yearlies and putting on eyeliner. I know these are my staples, even if I don’t want them to  be. I have to do them.

I think I might add eating pancakes for lunch as another one of my staples. It is quick, easy and gives you the most gloriously chocolate-y feeling (in my case it has to be chocolate!)

These pancakes are truly divine. The texture is beautiful and although the batter tastes overdone with coconut due to the coconut milk, the cooked pancake is brilliant. It truly is silky, though I am not sure how the French come into it…

These pancakes are fast to batter-up, easy to cook and flip and absolutely thrilling to eat!

I did make a few adaptations to this recipe for Chocolate French Silk Pancakes:

  1. Left out the powdered sugar and added dark chocolate chips (at least 1/2 cup for 1/4 of the pancake recipe – oops!)
  2. Added around 1 cup in total of the coconut milk instead of 1/2 cup when talking in 1/4 of the recipe – for the full recipe that would be mean 4 cups coconut milk (sounds like a lot but it truly is necessary for a smooth silk batter)
  3. I added an extra tsp of cocoa powder since I like my chocolate rich – very rich

I served it with this delicious homemade maple syrup
